One of my favorite recipes using chicken stock is this chicken and rice soup. It’s hearty and filling, but still light and packed with flavor.

INGREDIENTS

  • chicken stock
  • chicken breasts
  • carrots
  • celery
  • onion
  • garlic
  • rice
  • salt and pepper to taste

 

 

INSTRUCTIONS

Making Chicken & Rice using Homemade Chicken Stock

  1. In a large pot, bring chicken stock to a boil. Add chicken breasts and simmer for about 15 minutes, or until cooked through. Remove chicken from pot and shred with a fork.

  2. Add carrots, celery, onion, garlic and rice to the pot. Season with salt and pepper to taste. Simmer for about 20 minutes, or until vegetables are tender and rice is cooked.

  3. Add chicken back to the pot and serve. Enjoy!
