Combine with garlic, onion, olive oil, sea salt, freshly cracked pepper, dried or fresh oregano, basil, and optional chili flakes for heat.

Step-By-Step Recipe

  1. Fire‑roast the tomatoes (and garlic/onion if using) on the grill or under the broiler until charred on all sides (about 10‑15 minutes). 
  2. Let them cool, peel if desired (skins are optional—but keeping them can save prep time and extra nutrients).
  3. Blend tomatoes (and softened onion/garlic) with herbs and seasonings until smooth. Add reserved juices for thinner consistency.
  4. Simmer in a pot 15–30 minutes to meld flavors, stirring in fresh parsley or basil and optional sausage or mushrooms at the end if you’d like richer texture. 

Preserving, Freezing & Uses

Once cooled, portion sauce into quart-sized freezer containers or jars (leave headroom to allow expansion)—it freezes beautifully up to 3 months. 
Uses are endless: pasta nights, pizza nights, slather on roasted chicken, layer in lasagna, or even eat a bowl with crusty bread (a delicious home‑cooked indulgence!).
